A. For the paneer filling:
• 200 grams paneer (cottage cheese), cut into rectangular pieces
• 2 tablespoons grated paneer
• 2 tablespoons chopped cashew nuts
• 2 tablespoons chopped raisins
• 1/2 teaspoon red chili powder
• 1/2 teaspoon garam masala powder
• Salt to taste
B. For the gravy:
• 2 tablespoons ghee (clarified butter) or vegetable oil
• 1 medium-sized onion, finely chopped
• 1 tablespoon ginger-garlic paste
• 2 medium-sized tomatoes, pureed
• 1/4 cup yogurt, whisked
• 1/4 cup fresh cream
• 1 teaspoon turmeric powder
• 1 teaspoon red chili powder
• 1 teaspoon coriander powder
• 1 teaspoon cumin powder
• 1/2 teaspoon garam masala powder
• Salt to taste
• Chopped coriander leaves for garnishing
C. For the batter:
• 1/2 cup gram flour (besan)
• 1/4 cup water
• A pinch of salt
• A pinch of turmeric powder
D. For frying:
• Vegetable oil
E. Instructions:
1. In a mixing bowl, combine grated paneer, chopped cashew nuts, chopped raisins, red chili powder, garam masala powder, and salt. This flavorful mixture will be used as the filling for the paneer.
2. Take each paneer rectangle and cut a pocket in the center horizontally. Stuff the filling mixture into each paneer piece, ensuring it is evenly distributed.
3. In a separate bowl, prepare the batter by mixing gram flour, water, salt, and turmeric powder. Stir until you achieve a smooth and lump-free batter.
4. Heat vegetable oil in a deep pan or kadai for frying. Dip each stuffed paneer piece in the batter, ensuring it is fully coated. Carefully place the paneer in the hot oil and fry until it turns golden brown. Once fried, remove the paneer and place it on a kitchen towel to absorb any excess oil.
5. In another pan, heat ghee or vegetable oil. Add finely chopped onions and sauté until they turn golden brown.
6. Add ginger-garlic paste to the pan and sauté for a minute until the raw aroma disappears.
7. Now, add tomato puree to the pan and cook until the oil separates from the masala.
8. Reduce the heat and add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well and cook for a minute, allowing the flavors to meld.
9. Pour whisked yogurt into the pan and cook on low heat for a few minutes until the masala is well cooked.
10. Add fresh cream to the pan and mix well. Cook for another minute, ensuring the gravy achieves a creamy consistency.
11. Gently place the fried paneer pieces into the gravy, ensuring they are fully coated with the masala. Simmer for a few minutes to allow the flavors to blend harmoniously.
12. Garnish your delightful Paneer Pasanda with chopped coriander leaves, adding a fresh burst of flavor and visual appeal.
